Formula & How It Works
Conversion factors vary by sugar type: 1 cup granulated white = 200g = 7.05 oz. 1 cup brown (packed) = 220g. 1 cup powdered = 120g. 1 tablespoon white β 12.5g.
Calculation Example
Recipe calls for 3/4 cup white sugar: 3/4 Γ 200 = 150g. To substitute brown sugar: use 165g (packed) for a richer, moister result.
Expert Tips
Brown sugar is white sugar plus molasses β it adds moisture and flavor. When substituting, pack brown sugar firmly into the cup. Powdered sugar contains cornstarch β do not substitute 1:1 in baking by weight.
